Cod and Shrimp Soup

With Salt and Vinegar Mash Potatoes

  •  4 Large Potatoes
  • 3 tablespoons extra virgin olive oil
  • 2 Onions
  • 3-4 Ribs of Celery
  • 4 cloves of garlic
  • 2 tablespoons fresh thyme
  • ½ cup of dry white wine
  • 1 cup of chicken broth
  • 14.5 ounce can diced or stewed tomatoes
  • 1 ½ pd of cod fish
  • 1 pd of shrimp
  • ½ cup white vinegar
  • 2 tablespoons of butter

  1. In a deep pot add the potatoes with water and let boil. Add salt to the water and cook till potatoes are tender.
  2. In a second deep pot heat oil over medium heat.  Add the onions, celery, garlic, and spices, salt and pepper to taste.
  3. Cook onions and celery till soft. Pour wine, and cook for 1 minute. Stir in ½ cup chicken broth and tomatoes with their juice, bring to a simmer. Add cod and shrimp and season. Boil until cod and shrimp are completely cooked.
  4. Serve in bowls with a heaping of mash potatoes over them.
